Lemon Poppy Seed Shortbread
INGREDIENTS:
1/2 cup butter, salted, softened
1 tsp granulated sugar
1 cup all purpose flour
2 tbsp poppy seeds
1 tbsp finely grated lemon zest

DIRECTIONS:
1. Preheat oven to 350°F (175°C).
2. Using electric mixer, beat butter with sugar until light anf fluffy. In a separate bowl, combine flour, poppy seeds and lemon zest; using wooden spoon, gradually stir into butter mixture. Roll dough into balls. Place balls on cookie sheets; flatten into discs.
3. Bake in center of oven for 14 to 16 minutes or until lightly golden around the edges. Cool on pan on racks.
